Easy Breakfast Egg Muffins

A delicious and quick breakfast option that combines eggs, turkey bacon, and chicken ham in muffin form.

  • 6 large eggs
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. Add the turkey bacon, chicken ham, cheese, bell pepper, and green onions to the egg mixture and stir to combine.
  4. Grease a muffin tin and pour the mixture evenly into the cups.
  5. Bake for 20-25 minutes or until the eggs are set and the tops are lightly golden.
  6. Let cool for a few minutes before removing from the tin.

  • These muffins can be stored in the refrigerator for up to 5 days.
