Easy Apple Carrot Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1 cup milk
  • 1 medium apple, grated
  • 1 medium carrot, grated
  • 1 tablespoon maple syrup
  • 4 slices turkey bacon

Instructions

  1. In a bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, whisk the egg and milk until combined.
  3. Stir in the grated apple, carrot, and maple syrup into the wet mixture.
  4. Combine the wet and dry ingredients until just mixed. Do not overmix.
  5. Heat a skillet over medium heat and lightly grease it.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Cook the turkey bacon in a separate skillet until crispy.
  9. Serve the pancakes warm with crispy turkey bacon on the side.
