Deliciously Simple Crockpot Chicken Pot Pie for a Cozy Dinner

A warm and comforting chicken pot pie made easily in a crockpot, perfect for family dinners.

Ingredients

  • 1 pound chicken breast, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup peas
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 2 cups refrigerated pie crusts

Instructions

  1. In a crockpot, combine chicken, carrots, celery, peas, cream of chicken soup, chicken broth, thyme, black pepper, and garlic powder.
  2. Stir well to combine and cover. Cook on low for 4-6 hours or until chicken is cooked through.
  3. About 30 minutes before serving, roll out pie crusts and place one in the bottom of a pie dish.
  4. Spoon the chicken mixture into the crust, then cover with the second pie crust and cut slits for steam to escape.
  5. Bake in the oven at 425°F (220°C) for 30 minutes or until golden brown.

Notes

  • For a thicker filling, add a cornstarch slurry during the last hour of cooking.
  • Feel free to swap out the vegetables for your favorites.
