Crockpot Tuscan Chicken is a flavorful dish combining the richness of chicken with the smoky taste of turkey bacon, perfect for a hearty meal.

  • 4 chicken breasts
  • 6 slices turkey bacon
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Layer the chicken breasts at the bottom of the crockpot.
  2. Add chopped sun-dried tomatoes and fresh spinach on top of the chicken.
  3. In a bowl, mix heavy cream, turkey bacon, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  4. Pour the cream mixture over the chicken and vegetables in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  6. Serve warm, garnished with additional spinach or cheese if desired.

Notes

  • For a lighter version, you can substitute the heavy cream with Greek yogurt.
  • Excellent served over pasta or rice.
