  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon taco seasoning
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, finely chopped
  • salt and pepper to taste
  • tortilla strips for serving

Instructions

  1. In the crockpot, combine the chicken, black beans, corn, diced tomatoes, chicken broth, onion, garlic, red bell pepper, jalapeño, and taco seasoning.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  3. Shred the chicken using two forks and stir in the heavy cream.
  4. Season with salt and pepper to taste.
  5. Serve hot, topped with tortilla strips.
