Crockpot Creamy Chicken and Dumplings

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup biscuit dough (or pre-made dumplings)

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, cream of chicken soup, frozen vegetables, garlic powder, onion powder, black pepper, and thyme. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, drop spoonfuls of biscuit dough on top of the mixture.
  5. Cover and cook until the dumplings are fluffy and cooked through.
  6. Shred the chicken in the crockpot before serving and mix everything together.

Notes

  • For extra flavor, add a splash of soy sauce.
  • Serve with a side salad for a complete meal.
