Crock Pot Crack Potato Soup – Creamy, Cheesy & Totally Addictive

This creamy, cheesy soup made in a Crock Pot is completely addictive!

Ingredients

  • 4 cups diced potatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup bacon, cooked and crumbled
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Place the diced potatoes, onion, garlic, and chicken broth in the Crock Pot.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  3. Add cream cheese and shredded cheddar cheese to the pot and stir until melted.
  4. Stir in crumbled bacon, salt, and pepper.
  5. For a creamier texture, use an immersion blender to blend the soup to your desired consistency.
  6. Serve hot, garnished with additional bacon and cheese if desired.

Notes

  • For extra flavor, add chives or green onions as a garnish.
  • This soup can be thickened with a cornstarch slurry if desired.
