  • 4 slices turkey bacon
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped green onions
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the baby potatoes until fork-tender, then drain and let cool.
  2. Preheat the oven to 425°F (220°C).
  3. While the potatoes cool, cook the turkey bacon until crispy, then chop into small pieces.
  4. Once cooled, place the potatoes on a baking sheet and smash each one with a fork.
  5. Drizzle with olive oil, season with salt and pepper, and bake for 20-25 minutes until golden and crispy.
  6. In a bowl, mix sour cream, mayonnaise, Dijon mustard, and green onions.
  7. Once the potatoes are done, combine them with the dressing and turkey bacon.
