Creamy Sausage Tortellini Soup

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 package (9 ounces) cheese tortellini
  • 2 cups spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned.
  2. Stir in the onion and garlic, and sauté until the onion is translucent.
  3. Add the chicken broth and bring to a simmer.
  4. Stir in the heavy cream, tortellini, spinach, and Italian seasoning. Cook until the tortellini are tender.
  5. Season with salt and pepper to taste, then serve hot.
