Creamy Chicken Tortilla Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 cup heavy cream
  • 1 cup tortilla chips, crushed
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic, cumin, and chili powder; cook for 1 minute.
  4. Add chicken breasts and sauté until browned.
  5. Pour in chicken broth and diced tomatoes; bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in corn and heavy cream; let it cook for another 5 minutes.
  9. Serve with crushed tortilla chips, diced avocado, cilantro, and lime wedges.

Notes
