Creamy Cajun Sausage Pasta (One Pot)

  • 12 ounces penne pasta
  • 1 pound Cajun sausage
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 1 cup bell pepper, chopped
  • 1/2 cup parmesan cheese, grated
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat and add the Cajun sausage. Cook until browned.
  2. Add the onions and garlic, cooking until softened.
  3. Stir in the smoked paprika and Cajun seasoning.
  4. Add the chicken broth and bring to a boil.
  5. Stir in the penne pasta and bell pepper, and cook until the pasta is al dente.
  6. Reduce heat, and stir in the heavy cream and parmesan cheese until well combined.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes
