  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 8 ounces cream cheese, softened
  • ⅓ cup maple syrup
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. In another bowl, beat cream cheese, maple syrup, and sea salt until smooth.
  6. Pour half of the pumpkin batter into the loaf pan, then spoon the cream cheese mixture on top, swirling with a knife.
  7. Top with remaining pumpkin batter and swirl again.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.
