Cowboy Casserole is an easy weeknight family dinner.

Ingredients

  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups frozen mixed vegetables
  • 1 can cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 tablespoon ranch seasoning
  • 1 package refrigerated tater tots

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground turkey and turkey bacon until browned.
  3. Add the chicken ham and mixed vegetables, then stir in the cream of mushroom soup and ranch seasoning.
  4. Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  5. Arrange tater tots on top of the cheese.
  6. Bake for 30-35 minutes, until the tater tots are golden brown.

Notes

  • For added flavor, garnish with fresh herbs before serving.
  • Feel free to substitute the ground turkey with beef if preferred.
