Chorizo, Egg & Green Chili Breakfast Casserole

A savory and satisfying breakfast casserole featuring chorizo, eggs, and green chili.

  • 1 pound chorizo sausage
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheese
  • 1 can diced green chilies
  • 4 cups cubed bread
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the chorizo in a skillet over medium heat. Drain excess fat.
  3. In a large bowl, whisk together eggs and milk. Add salt and pepper.
  4. Add the cooked chorizo, green chilies, and bread to the egg mixture.
  5. Fold in cheese and transfer to a greased baking dish.
  6. Bake for 30-35 minutes or until the eggs are set and the top is golden.
