Chicken Fajita Soup

A comforting and delicious soup that combines the flavors of chicken fajitas in a warm, hearty dish.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and bell peppers, sautéing until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chicken breasts, chicken broth, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Simmer for another 10 minutes before serving.
