Cheesy Broccoli Baked Potatoes

Delicious and easy-to-make cheesy broccoli baked potatoes that make for a perfect comfort food dish.

  • 4 large potatoes
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes with a fork. Bake for 45-60 minutes until tender.
  3. While the potatoes are baking, steam the broccoli until bright green and tender.
  4. In a bowl, mix together the shredded cheese, sour cream, milk, olive oil, garlic powder, salt, and pepper.
  5. Once the potatoes are done, cut them open and fluff the insides with a fork.
  6. Stir in the broccoli and cheese mixture until well combined.
  7. Return to the oven for an additional 10 minutes to melt the cheese.
  8. Serve warm.
