  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the oil and eggs until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in grated carrots and chopped walnuts.
  6. Pour the batter into a greased sheet pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool before frosting.

Notes

  • For added moisture, consider adding crushed pineapple to the batter.
