  • 1 pound butternut squash, peeled and cubed
  • 6 slices turkey bacon, chopped
  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. Add olive oil to the same skillet, then add the butternut squash. Cook until tender, about 10-15 minutes.
  4. Add garlic and sage, and cook for an additional minute.
  5. Mix in the cooked pasta and turkey bacon, then season with salt and pepper. Serve hot and sprinkle with Parmesan cheese.
