Butternut Squash Casserole

A delicious and comforting butternut squash casserole made with turkey bacon, perfect for any occasion.

  • 2 cups butternut squash, peeled and cubed
  • 1 cup turkey bacon, chopped
  • 1/2 cup onion, diced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy, then remove and drain on paper towels.
  3. In the same skillet, sauté the diced onion until translucent.
  4. In a large bowl, mix the butternut squash, cooked turkey bacon, sautéed onion, cheese, milk, eggs, salt, pepper, and garlic powder.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes, until the top is golden and the squash is tender.

Notes

  • For a vegan option, substitute eggs with flaxseed meal and cheese with a plant-based alternative.
