Blueberry Breakfast Quesadilla – Sweet, Cheesy & Perfectly Golden!

A delightful and delicious way to start your day, these blueberry breakfast quesadillas are cheesy, sweet, and perfectly golden!

Ingredients

  • 1 cup fresh blueberries
  • 1 cup shredded mozzarella cheese
  • 2 large flour tortillas
  • 2 tablespoons cream cheese
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions

  1. In a bowl, mix the cream cheese, honey, and vanilla extract until smooth.
  2. Spread the mixture evenly on one side of each tortilla.
  3. Sprinkle shredded mozzarella cheese and fresh blueberries over one tortilla.
  4. Place the second tortilla on top, cream cheese side down.
  5. Heat butter in a skillet over medium heat.
  6. Cook the quesadilla for 3-4 minutes on each side or until golden brown and crispy.
  7. Slice into wedges and serve warm.

Notes

  • For added sweetness, drizzle some maple syrup on top before serving.
  • Try adding some walnuts for extra crunch.
