- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
- Heat the olive oil in a large pot over medium heat.
- Add the turkey bacon and cook until crispy.
- Remove the bacon and set aside. In the same pot, add the onion and garlic, sautéing until softened.
- Add the diced tomatoes, vegetable broth, basil, salt, and black pepper. Bring to a boil.

- Chop the reserved turkey bacon and add it back to the soup before serving.
