- 2 cups cooked, shredded chicken
- 1 cup green enchilada sauce
- 1 cup shredded cheese
- 1/2 cup sour cream
- 8 corn tortillas
- 1/2 cup chopped onions
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add the shredded chicken, green enchilada sauce, cumin, garlic powder, salt, and pepper. Mix well and cook for 5 minutes.
- Soften the corn tortillas in the microwave for 30 seconds.
