  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 8 corn tortillas
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  3. Add the shredded chicken, green enchilada sauce, cumin, garlic powder, salt, and pepper. Mix well and cook for 5 minutes.
  4. Soften the corn tortillas in the microwave for 30 seconds.
  5. Place a few tablespoons of the chicken mixture in each tortilla, roll them up, and place them seam-side down in a baking dish.
  6. Top with remaining enchilada sauce and shredded cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
