Deliciously layered with spinach, mushrooms, and cheese, this lasagna is a comforting family favorite that everyone will love.

Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, mix ricotta cheese with spinach, garlic powder, Italian seasoning, salt, and pepper.
  4. In a baking dish, layer marinara sauce, lasagna noodles, ricotta mixture, mushrooms, mozzarella, and Parmesan, repeating the layers.
  5. Finish with mozzarella and a sprinkle of Parmesan on top.
  6. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • For best results, let the lasagna sit for 10 minutes before serving.
  • Feel free to add other vegetables such as zucchini or bell peppers.
