  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 2 cups mixed berries (fresh or frozen)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, almond flour, salt, and cinnamon.
  3. Add maple syrup and melted coconut oil to the dry ingredients and mix until well combined.
  4. Press half of this mixture into the bottom of a greased baking dish.
  5. Spread the mixed berries evenly over the top.
  6. Crumble the remaining oat mixture over the berries.
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool before slicing into bars.
