  • 1 block (8 ounces) feta cheese
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, add the cherry tomatoes, feta cheese, olive oil, red pepper flakes, salt, and black pepper. Stir to combine.
  3. Bake for 30 minutes or until the tomatoes are blistered and the feta is soft.
  4. Meanwhile, cook the pasta according to package directions; drain and set aside.
  5. In a skillet, sauté the shrimp with garlic until they are pink and cooked through.
  6. Once the feta and tomatoes are done baking, mix them with the shrimp and pasta. Add fresh basil and stir well.
