  • 8 ounces asparagus, trimmed and cut into pieces
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup burrata cheese, torn
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add the asparagus and sauté until tender.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Stir in the crumbled turkey bacon and half of the burrata cheese.
  5. Pour the egg mixture over the asparagus in the skillet and stir gently.
  6. Cook without stirring for about 3-4 minutes until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes or until the frittata is set.
  8. Remove from the oven and top with the remaining burrata before serving.
