Instructions

  1. Rinse quinoa and combine with vegetable broth in a saucepan. Bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy.
  3. In a large bowl, mix cooked quinoa with kale, cherry tomatoes, and walnuts.
  4. In a small bowl, whisk together olive oil, lemon juice, turmeric, and black pepper. Pour over salad.
