30 Minute Creamy Chicken Tortilla Soup

This creamy chicken tortilla soup is quick and comforting, perfect for busy weeknights.

Ingredients

  • 2 cups shredded cooked chicken
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 cup heavy cream
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add chicken, broth, corn, black beans, and taco seasoning. Bring to a boil.
  3. Reduce heat and stir in heavy cream and lime juice. Simmer for 5 minutes.
  4. Serve topped with tortilla strips, cheese, and cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • This soup can be made vegetarian by omitting chicken and using vegetable broth.
